AZ KOMBUCHA RECIPE

Utensils and materials:
A pot to boil water, bigger size glass jar (fermenting jar), long handled spoon, paper towel and a rubber band.
Choose the quantity of tea you are going to make and prepare the ingredients accordingly.
Wash your hands and all the utensils with soap and rinse them well with the water.
If you use city water, boil the water for at least 5 minutes to purify it from the chlorine.
Turn the heat off and add the tea bags into the water. Cover and let it simmer.
In about 5 minutes remove the tea bags from the water (if you use loose leaf tea, strain the solution) and add sugar. Stir until the sugar dissolves totally.
Add apple cider vinegar to the tea as an extra protection from mold and stir it gently with a spoon.
Cover the jar with the paper towel and tighten it down with a rubber band to protect the brew from fruit flies.
Place the jar into a warm dark place with a constant temperature about 70 – 75 °F away from tobacco smoke, strong smells and direct sunlight.
After 5 - 7 days, when you see a new mushroom growing on top of your tea, you can try it using a straw. When Kombucha is generally ready, it should have a pleasant semi-sweet taste and a light vinegar aroma. Let it ferment to your liking.
After 10-14 days (depends on personal taste) harvest your tea. Remove the culture along with the “baby” mushroom from the jar. Put the cultures in a glass storage container, add a cup of freshly made Kombucha tea, and close container with the lid. If you are not ready to make your next batch now, place the container into the fridge.
Pour the rest of your Kombucha tea into the bottles and stopper them tightly. Let the bottles sit at the room temperature for another 3-5 days for an additional fizz, or chill the tea in the refrigerator and drink.
To begin a new cycle, use the starter tea and the culture from the storage container and repeat the above steps. Enjoy!
